What makes Wagyu beef taste so good?
Wagyu cattle carry a unique genetic trait that produces extraordinary marbling — fine threads of low-melting fat woven throughout every cut. Sometimes that marbling is so fine it's nearly invisible — but it's there, and you'll taste it. That fat melts at a lower temperature than the fat in conventional beef, which is why Wagyu tastes richer, more buttery, and tender. At Weise Farms, our 300-day slow finish unlocks the full power of those genetics, producing beef with a depth of flavor that other breeds simply cannot match.
Does Weise Farms ground Wagyu beef taste different from store bought ground beef?
Yes — and once you taste it, you'll never want to go back. Most store bought ground beef is a blend of trimmings from multiple animals, sometimes from multiple countries, ground together with no way to trace where it came from. Weise Farms ground Wagyu beef comes from one animal, raised right here at Weise Farms in Central Texas, from birth to harvest. The difference shows up the moment it hits the pan — richer color, better aroma, and a flavor that makes even a simple weeknight burger something worth sitting down for. That's what real ground beef tastes like.
Is Wagyu beef actually healthier for you?
Yes — and research backs it up. Wagyu beef contains a higher concentration of monounsaturated fats, including Oleic acid — a monounsaturated fat known for its heart-healthy properties. It is also richer in Omega-3 fatty acids. The low melting point of Wagyu fat is one reason many people find it easier on their body than conventional beef. What is the difference between Pureblood Wagyu and 50% Wagyu beef?
Pureblood Wagyu carries at least 93% Japanese Black Wagyu genetics — the highest marbling, the richest flavor, and the greatest concentration of Omega-3 fatty acids we offer. It is our top recommendation for anyone who wants the full Wagyu experience. Our 50% Wagyu, also called F1, is half Wagyu and half traditional beef genetics. It still delivers exceptional marbling and tenderness far beyond anything you will find at a grocery store, at a more budget-friendly price point. Pureblood is $9.50 per pound hanging weight. 50% Wagyu is $7.50 per pound hanging weight.
What is a 300-day slow finish and why does it matter for beef quality?
We simply refuse to compete on price because some beef is rushed to harvest, and pushed to grow faster with the use of growth hormones. Ours isn't. At Weise Farms, our Wagyu go through a 300-day slow finish on a heritage-style blend of barley and spent grains, inspired by traditional Japanese methods. That extended finish is what creates the deep, extraordinary flavor and tenderness that Wagyu is famous for. That is also what triggers the conversion of saturated fats into Oleic acid — a monounsaturated fat known for its heart-healthy properties. Is Wagyu beef better than grass-fed beef?

Does Weise Farms raise their own Wagyu calves?
Yes. Every calf at Weise Farms is born right here on our land. We know each one from the day it arrives. Our cattle give birth here, our calves are raised here, and every animal remains under our watchful care from birth to harvest.
Buying a Half-Calf or Whole Cow
Where can I order Wagyu beef?

How can I order a whole cow?
Simply place two half-calf deposits at weisefarms.com and we will take care of the rest.
How do I purchase a half-calf?
Buying a half-calf of Wagyu beef from Weise Farms is simple. Place your deposit at weisefarms.com to reserve your beef and book your harvest date. Once your animal is processed, you will receive an invoice for the remaining balance based on actual hanging weight. Pay your balance, submit your custom cut sheet, and your beef will be cut exactly the way you want it. Processing is included — no surprise bills from the processor. We handle it.
What cuts of Wagyu beef does Weise Farms sell?
Weise Farms sells a full range of Japanese Black Wagyu beef cuts including ground Wagyu beef, New York strip, filet mignon, ribeye, brisket, osso bucco, beef cheeks, tenderized cutlets, fajita meat, roasts, and more. Individual cuts are available at weisefarms.com. Meat Club members receive a farmer selected variety each month. Families who purchase a half-calf or whole cow receive a custom cut sheet and get a full freezer of Wagyu from a single animal raised at Weise Farms.

How much freezer space do I need?
A good rule of thumb is roughly 30 pounds of packaged meat per cubic foot of freezer space. So a 14 cubic foot chest freezer holds around 420 pounds — more than enough for a half-calf plus other items. We believe the larger the freezer the better. Here's Weise Farms Wagyu Tri-Tip Recipe — Season with salt & pepper. Roll and tie with twine. Roast at 250 for two hours, and then 350 for 30 minutes. Finish with a reverse sear in a screaming hot pan for a minute per side. Rest for 5 minutes covered in foil. Slice to reveal a perfect pink medium rare. Serve with horseradish sauce.
