What is Wagyu beef?

Wagyu is a breed of cattle originally from Japan, prized for its extraordinary marbling — the fineness of low-melting fat running through the meat. That marbling is what makes Wagyu so tender and richer in flavor than any beef you'll find at a grocery store. It's also higher in Omega-3 fatty acids and lower in bad cholesterol than conventional beef, making it a heart-healthy choice for your family.

Is Wagyu beef healthy?

Yes — and it's not just marketing. Wagyu beef contains a higher concentration of monounsaturated fats, including Oleic acid — the same heart-healthy fat found in extra virgin olive oil. It's also rich in Omega-3 fatty acids and lower in bad cholesterol than standard beef. What is the difference between Pureblood Wagyu and 50% Wagyu?

Our Pureblood Wagyu carries elite Japanese Wagyu genetics — the highest marbling, the richest flavor, and the most health benefits we offer. Our 50% Wagyu (F1) is half Wagyu, offering excellent marbling and tenderness at a lower price point. Learn more on our "How We Raise Our Wagyu page.

How much does a half-calf cost?

A deposit of $800–$1,000 reserves your half-calf, depending on which one you choose. We deduct the deposit from the final price, which is based on hanging weight after harvest. Our Pureblood Wagyu is $9.50 per pound hanging weight and our 50% Wagyu is $7.50 per pound. Standard processing is included.

How much freezer space do I need for a half-calf?

A good rule of thumb is roughly 30 pounds of packaged meat per cubic foot of freezer space. So a 14 cubic foot chest freezer holds around 420 pounds — more than enough for a half-calf plus other items. We believe the larger the freezer the better. What is The Meat Club?

The Meat Club is our monthly Wagyu beef subscription. Every month you receive a hand-selected box of premium Wagyu beef — no grocery store, no guessing, no mystery meat. Subscriptions start at $55 per month for 5 pounds of ground wagyu beef, or $100 per month for a full variety pack including steaks, roasts, fajita meat and more. You can cancel anytime. Where do I pick up my order?

We offer convenient pickup in La Grange, Texas, Tuesday through Friday from 9am to noon, with drop spots in Winchester, Giddings, Serbin and all over Central Texas. We make it easy. Call or text Becky at (979) 540-7164 to make arrangements that work best for you.

Weise Farms Wagyu Beef Filet Mignon

OMG! That filet was amazing. Coarse salt and pepper crusted, wrapped in bacon, seared in a smoking hot cast iron skillet, flipped and  finished in a 500 degree oven. Killer!
