A Legacy of Farming Since 1854
We did not start with the goal of selling our beef as we do now. Instead, we began by sharing pictures of our delicious foods on social media. People responded enthusiastically, asking if they could buy some.

The farm has been in the Weise family since 1854. Tim is the fifth generation to live here. Our son Zach and his wife Brooke represent the sixth generation. Our grandchildren, Gable and Emmy, are now the seventh generation living on the lands of Weise Farms.
Over time, we grew corn, peanuts, and cotton on these pastures, and cattle were always part of the farm. Tim’s parents were very self-sufficient, which shaped our way of life as well. As they aged, they passed the responsibility of the cattle onto us. Throughout the years, we've raised various breeds of cattle.
Embracing Sustainable Farming
It made sense to utilize the farm as it was intended for generations. To keep the farm sustainable, we began selling our beef locally. It seemed like the right move. After all, shouldn’t Texans eat Texas-raised beef? We believe that!
As we explored wagyu beef, we discovered its numerous health benefits. Wagyu beef naturally contains a higher percentage of omega-3 fatty acids than regular beef. This feature makes it a heart-healthy option.
Unique Nutritional Benefits of Wagyu Beef
Wagyu beef is lower in total cholesterol compared to other beef breeds. It has a higher proportion of desirable monounsaturated fats (MUFAs). Research shows that MUFAs can lower cholesterol levels and increase HDL (good cholesterol) levels. Consuming meats high in MUFAs is healthier than relying solely on lean meats.
Wagyu beef also contains polyunsaturated fatty acids (PUFAs). These essential fatty acids are crucial for nerve function, blood clotting, brain health, and maintaining muscle strength. Essential fatty acids cannot be manufactured by the human body, meaning we must obtain them through our diet. That’s where wagyu beef shines—it is packed with these vital nutrients.
Moreover, wagyu is rich in conjugated linoleic acid (CLA), containing about 30% more CLA per gram than other beef breeds. CLA is an essential fatty acid known for its health benefits. As an antioxidant, CLA may even have cancer-fighting properties and help ward off heart disease.
What Makes Wagyu a Healthier Choice?
Many health food stores sell CLA as a weight-loss supplement. However, it’s most effective when consumed through natural food sources. Your body absorbs nutrients more efficiently from food than it does from supplements.
By choosing wagyu beef from Weise Farms over grocery store beef, you can reap a wide range of benefits. Wagyu beef is also packed with iron, choline, and essential vitamins A, B, E, and K2.
Wagyu beef boasts a complete protein profile filled with essential amino acids. It provides a balanced fat profile necessary for a healthy brain and body to thrive. We believe it is one of the most nutritious whole foods you can consume.
Savor the Flavor of Wagyu
When you take your first bite of wagyu, you might wonder if it’s too good to be true. However, those are the facts: marbled, tender, delicious meat can also contribute to your health. Don't shy away from fat or red meat. Educate yourself about how different amino acids function in your body, and you can make informed dietary choices.
