Osso bucco has a reputation for being a "fancy" cut — something you'd order at a nice restaurant, not cook at home. But on our farm, it's one of our favorite cuts to slow-cook any day of the week, because it turns out perfect every time. The bone-in wagyu shank braises low and slow until the meat falls away from the bone and the marrow inside turns rich and buttery.
