Weise Farms Wagyu Beef Osso Bucco Recipe

We wanted to share our Weise Farms Wagyu beef osso bucco recipe with you. Osso bucco has a reputation for being a "fancy" cut — something you'd order at a nice restaurant, not cook at home. But on our farm, it's one of our favorite cuts to slow-cook any day of the week, because it turns out perfect every time. The bone-in wagyu shank braises low and slow until the meat falls away from the bone and the marrow inside turns rich and buttery. If you've never cooked osso bucco before, this is the recipe that will make you wonder why you waited so long.
Ingredients
2 wagyu osso bucco shanks (about 1–1.5 lbs each)
Salt and pepper, to taste
2 tbsp olive oil or beef tallow
1 onion, diced
6 carrots, diced
6 red potatoes, quartered
3 cloves garlic, minced
Beef stock or water (enough to come about halfway up the shanks)
Directions
Season the shanks generously with salt and pepper.
Heat oil or tallow in a heavy pot over medium-high heat. Sear the shanks on all sides until deeply browned, then set aside.
In the same pot, sauté the onion until softened, about 5 minutes. Add the garlic and cook 1 minute more.
Return the shanks to the pot, then top with the carrots and potatoes.
Add beef stock or water until it comes about halfway up the shanks.
Cover and simmer on low, or braise in a 250°F oven, for 5 hours, until the meat is fall-off-the-bone tender.
Serve the shanks and vegetables with the gravy spooned over the top.
